Machine for the preparation of yeast autolyses VA-0,6- for preparation of a suspension of bentonite, which are used for processing of wort, wine material, their lighting, stabilization.
The yeast autolysis is obtained by treating the yeast in the installation. It is possible to make yeast, after treatment, in a wine material in a dosage amount, with an exposure for 10 days. This ensures a reduction mass concentration of protein in wine materials, as a result of active proteolytic enzymes. In this way, wine materials, enriched with components of yeast autolysis, are obtained.
Installation design: a special design disintegrator with two rotors rotating in different directions. Rotor - a disk, connected to the ring discs with steel fingers, is attached to a separate shaft. Rotor shaft rotates from its electric motor. The plant provides, during cyclic pumping of raw materials, treatment in cavitation mode, which guarantees guaranteed, complete destruction of yeast cells, their autolysis, provides activation of bentonite, does not require its swelling. The installation carries out perfect autolysis of yeast, in an accelerated mode, of guaranteed quality. Using autolysis of yeast after treatment VA-0,6, gives a significant increase in the quality of champagne, sparkling wines;
